Grapes used: Merlot (50%) - Cabernet Sauvignon (50%)

Yield per hectare: merlot 90 quintals - Cabernet Sauvignon 80 quintals.

Harvest: Cabernet Sauvignon in first week of September - Merlot at the end of August.

Bottling: Two batches.

FERMENTATION

Method: Crushing and de-stemming followed by at least 14 days of maceration with the must.

Temperature: Start at 20°Cand is completed at 28-30°C.

Refinement: In French oak barrels

Malolactic: No.

Ageing potential: Long-living, will last throughout time.

TASTING NOTES

Colour: Intense ruby red with violet tones.

Aroma: Note of red berries and cherries with hints of chocolate, black pepper and shades of mint and balm.

Palate: Conspicuously tannic, charming finesse, well-structured with a strong and seductive character.

Cabernet Suavignon: Di origine bordolese è la varietà internazionale più rinomata per la produzione di vini di grande qualità e longevità. Nato dall'incrocio spontaneo tra Cabernet Franc e Suavignon Blanc si caratterizza per l'incredibile adattabilità a qualsiasi tipo di terreno, senza mai perdere il suo inconfondibile carattere.
