Fruity, vertical and very fragrant. A pure organic Catarratto with a lively and crystalline profile that fully reflects the varietal characteristics of one of the oldest vines in Sicily.
After a careful selection of the grapes, we proceed with the soft pressing, carried out at a controlled temperature. The Sophia Bianco by Principe di Corleone is a versatile wine, characterized by an aromatic bouquet of citrus fruits, embellished with enchanting notes of spring flowers.
ENO-SENSORY ANALYSIS
Colour: Straw yellow colour with greenish reflections.
Aroma: Ample, with hints of white flowers that recall peach blossoms, citrus fruits and fresh almonds.
Taste: Fresh and persistent on the palate, with a full and harmonious finish.
HOW TO TASTE
Pairings: It goes well with any type of fish-based dish, sublime with shellfish. Also good in combination with soft cheeses and white meat main courses.
Recommended glass: Tulipano.
Serving temperature: 8/10°C.

White vinification: Destemming, cold maceration and soft pressing of the grapes. The vinification takes place in reduction and at a controlled temperature (16/18°C) for approximately 12 days.
Refining: Refines in the bottle for approximately three months.
